First you have to rice a head of cauliflower in a food processor. Just don't "over-rice" it because it becomes mush. I read (when I looked up how in the H* you "rice" cauliflower) that the "rice" can be used as a base in anything you would use rice: Chicken ala King, Chinese, etc. The only thing is that it won't absorb so anywhere you use rice as an absorbent (stuffed peppers) it it can't be substituted.
Anyway, then you microwave the "rice" for 8 minutes. Add 1 cup Mozzarella Cheese (I used the Target Mozzarella Parmesan mixture), 1 egg, 1/2 of a teaspoon of Garlic and 1 tsp Garlic Salt. Mix it up
Then you form it into a crust. It was easier to do than using regular pizza dough. It was so perfectly round! Oh, and the smell was incredible!
Now, drizzle LIGHTLY with olive oil and use your fingers to spread it all over the crust. This helps it to brown. Pop it into a 450 degree oven for 15 -20 - until it's firm and browned.
Meanwhile get your toppings going . . .Yeah look at the outright gorgeousness of those Baby Bellas from Trader Joes! They were on sale and looked beautiful! We had ground Jenny-O turkey, Mushrooms and Onion on our pizza.
Okay, looks good right? I feel like Cookie Monster - "Smell like pizza crust, Look like pizza crust, feel like pizza crust . . .but do you TASTE like pizza crust?" We shall see! So top it with Marinara or pizza sauce, add 4 oz of Goat cheese YES DO IT. It's good! Top with your toppings of choice. Use the remaining cup of Mozzarella Cheese and pop it under a HIGH broiler 3 -5 minutes. Whatch it, that broiler can get away from you! A great Racheal Ray tip is to leave the oven door open a crack so you can watch it at alll times.
Yep! It was awesome! Mike declared that it was the best homemade pizza he'd ever had . . .no lie. It was that good! *Special note is to make sure that the ingredients are cooked and warm as it will only be under a broiler for a short amount of time!

Is this a lot healthier than real pizza? Was it a lot of trouble? It intrigues me but its a lot easier to buy a pizza...unless it's a lot healthier. Hmmm...
I'd assume it's healthier! The kids got more veggies if nothing else!
